Handy Hint

It is normal for some liquid (whey) separation to occur. The protein in the yoghurt releases the water in the form of whey.

The whey shows you that the live, active cultures are really alive and active. Whey is full of nutrients and therefore very healthy for you. Just stir it back into the yoghurt to make sure you get all the nutritional benefits.

It's hard to go shopping at the supermarket these days without the word "probiotic" jumping out at you from the shelves. Everything from yoghurt to fruit juice is now fortified with what, essentially is, bacteria. These "good guys" of the microbial world are naturally present in our gut, and have long been recognised to be of benefit to our wellbeing, helping to maintain a healthy balance and improving the composition of bacteria in the colon.

Probiotics naturally occur in very few foods, such as fermented milk, meaning that traditionally the NZ diet contains very small amounts. Exposure to stress, pollution and drugs such as antibiotics reduces the amount of good bacteria in our digestion systems, which can trigger bloating, reduce immunity, worsen asthma and allergies, raise cholesterol, and lead to an increased susceptibility to ulcers and food poisoning.

The most commonly used probiotic is made up of bacteria from two families: lactobacilli and bifidobacteria. For the probiotic to be effective, scientists have to be sure that specific types of both bacteria are consumed in a form that will survive the journey through the digestive tract. When you eat a probiotic, it must pass through the acidic environment of the stomach and the digestive action in the small intestine, and then to get to the colon, where the bacteria can colonise and work their health-giving magic.
