Healthy Summer Dips
The barbecue season is fast approaching so here are some fresh new ideas for healthy dips and salad dressings.
By using Doctors Choice Yoghurt for your summer dips and dressings you can be sure that the whole family benefit from probiotic goodness, as well as avoiding extra additives and preservatives
Base Dip
For a simple, creamy dip just take a clean piece of cheesecloth, or a piece of kitchen roll and use it to line a sieve. Cover and strain the yoghurt over a bowl in the fridge until the desired consistency is reached. 6 hours is a minimum with up to 24 a maximum when it will be really thick and spreadable - perfect for sandwiches and toast. It will then be ready to be used with your favourite flavourings.
We like;
Chives with crushed fresh garlic
Finely chopped spring onions
Mint and cucumber works really well as a dip or a cooling accompaniment to hot dishes, make it as smooth or chunky as you like, both are delicious and look great.
Any ready made Pesto, or be creative and blitz/chop up and handful of soft herbs - parsley, basil, mint, coriander and mix through
Roasted red peppers puréed - or use the thick yoghurt to stuff baby red and yellow peppers as a change from Feta cheese
For a different taste sensation use the Goats milk yoghurt.
Dressings
Salad dressings can be made using cow or goat milk yoghurt straight from the pot and whisking it with other ingredients to make a lower fat, living dressing, that still tastes amazing. If you prefer a thicker dressing then strain yoghurt first to remove some of the whey before adding dressing ingredients.
Our Favourite Ranch
Mix together;
Equal amounts of Drs Choice cow or goat milk yoghurt - quantities below are for using about half a cup each of yoghurt and mayo
Milk, a tablespoon or so to thin to desired consistency
2 tablespoons chopped fresh dill ( you could use dried if desperate and have time to let it stand before using for flavour to develop)
2 tablespoons Celery or Italian Parsley leaves - or any kind of Parsley you have handy
2 tablespoons finely diced red onion or shallot
1 clove of minced garlic
1 tablespoon Dijon mustard
2 tablespoons lemon juice
Feeling Spicy?
For something different to accompany grilled meat, kebabs or chicken, try our Chilli Yoghurt. Perfect for spicing up a family barbeque.
About half a pot of Drs Choice cow or goat milk yoghurt For thicker consistency strain for about 10 minutes to remove some of the whey
1 or 2 fresh red chillies, deseeded and chopped
2 tablespoons chopped fresh coriander, or parsley if preferred
1 clove of minced garlic
Juice of 1 lime (or lemon)
small pinch of caster sugar
Simply combine all ingredients together and keep cool until ready to eat. The longer the yoghurt is strained the thicker it gets, we like ours really thick so often have yoghurt draining in the fridge ready to be made into dressings or just to have alongside cakes or desserts in place of cream.
